Three ways to get the rack

Compared on what you actually receive. No prices here — the waitlist opens first, and we would rather quote you honestly than pin a number to a page.

Single Origin

One coffee at a time, followed properly. You get the same origin for as long as the lot lasts, then we move you on and tell you why.

The Rack

Everything on the shelf that month, in small bags. Built for people who want to taste the difference between two washed lots side by side rather than read about it.

Standing Order

The same coffee, the same roast, every week, for people who have decided. We will tell you when the lot changes and what we changed on the drum to keep it close.

The dip in the first minute
Cold beans hitting a hot drum pull the temperature down before it recovers. The lowest point is the turning point, and where it lands tells you how hard the roast was charged.
The long steady climb
This is where sugars brown and the flavours you will actually taste are built. A climb that flattens too early is the one thing we cannot fix later, which is why the middle of a curve is the part we watch.
The kick near the end
First crack. The bean releases its own heat and the curve steepens whether you want it to or not. Everything after this point happens fast, and the gap between here and the drop is where a light roast becomes a dark one.
Where the line stops
The drop. Two coffees can reach the same final temperature by very different routes, so the end point alone tells you almost nothing — it is the shape of everything before it that decides the cup.
Why are there no prices?

Because we do not know them yet. Green prices move with each harvest and we would rather quote you honestly when the waitlist opens than pin a number to a page and quietly change it later.

Can I pick the coffee?

On Standing Order, yes — you pin one and we hold it. On Single Origin and The Rack we choose, because the point of both is to move you through the shelf rather than let you settle on the one you already like.

What happens when a lot runs out?

We move you to the closest thing we have and send you both curves so you can see what changed. We do not substitute quietly and we do not pretend the replacement is the same coffee.

Do I have to read the curves?

No. The coffee is the same whether you look at them or not. They are there because we think you are entitled to see what we did, not because understanding them is a condition of drinking it.
