The steps
Clock starts at 0:00- —Rinse the paper through, tip the water out, add the grounds and level the bed flat.
- 0:00Bloom to roughly double the dose in water. Swirl once. It should dome, then settle.
- 0:45First pour, up to half the total water, in slow circles — stay off the wall of the cone.
- 1:30Second pour, up to the full water. Keep the bed flat; do not stir it.
- 2:15Let it draw down. A level bed means it ran evenly; a crater means you poured too hard.
- 3:00Done. Stalled long past this? Grind coarser. Finished well before it? Grind finer.
